Introduction :

panchmel or panchratana daal is a rajasthani cuisine recipe prepared with the combination of 5 daals. Basically, panchratana daal is a curry prepared from 5 lentils with spices. daal recipes are very common in india, and it is consumed with either rice or rotis. panchmel daal is also a type of daal coming directly from rajasthani cuisine. it is very simple, tasty and yet highly nutrient and rich in protein.

like everyone i am also very fond of daals, but eating the same recipe of daals is like drinking same kind of water everyday, so, by taking inspirations from different blogs and youtubers i thought that let's try out this amazing recipe, and i love to share this recipe with all of you i hope you all will surely like this recipe.

Ingredients :

Daal's used :

▪︎2 tbsp moong daal 
▪︎2 tbsp masoor daal 
▪︎2 tbsp toor daal
▪︎2 tbsp chana daal
▪︎2 tbsp black urad daal

For masala :

▪︎1 medium size onion, chopped
▪︎1 medium size tomato, peeled and chopped
▪︎2 dry red chillies
▪︎10 curry leaves/kadhi patta
▪︎2 tsp ginger-garlic paste
▪︎1/2 tsp black mustard seeds/kali rai
▪︎1 tsp cumin seeds/ jeera
▪︎2 pinch of asafoetida/hing
▪︎1/2 tsp of tumeric powder/ haldi powder
▪︎1 tsp of red chilli powder/lal mirch powder
▪︎1 tsp coriander powder/ dhaniya powder
▪︎1 tsp dry fenugreek leaves/ kasuri methi
▪︎1 tsp garam masala
▪︎3 tbsp oil/ghee/or butter
▪︎2 tbsp chopped coriander leaves
▪︎salt, as per taste

Procedure :

1.combine all the 5 daals in equal proportion and soak in water for 30-45 mins.

2. pressure cook the daals adding 3 cups water for 4-5 whistles.

3. In a pan heat ghee and add the mustard, cumin and fry them. let them splutter.

4. add the onions and fry them till they become transparent or light brown.

5. now add ginger-garlic paste and fry untill the raw smell disappeares.

6. add red chilies, curry leaves and stir them well.

7. now its time to add the tomatoes. cook them till they soften and you will see oil releasing from the sides.

8. add all the spice powders like- turmeric powder, red chilli powder, coriander powder, and fry them for a minute.

9. add the cooked and mashed daals in the spice mixture and stir them well.

10. now, add water and salt as per taste.

11. continue to stir and cook the daal for 5-6 minutes on low to medium flame.

12. Finally, add the crushed kasuri methi and garam masala as well.

13. furthermore, add chopped coriander leaves on the top and give it a nice stir.

14. finally, our panchmel daal is ready. serve with choice of rotis, naans and rice recipes.
