Introduction:
parfait is mainly two types of frozen dessert, in france, where the dish originated, parfait is made by boiling cream, egg, sugar and syrup to create a custard like puree which is sometimes served in a parfait glass. the american version includes more ingredients like granola, nuts, yogurt, and liqures made in combination with a topping of fruits or whipped cream that are layered and served in a tall glass. i have tried a parfait in a restaurant, and i really liked it so, i thought to make it and share with you all and suddenly one day i was looking for some recipe and i found a new version of parfait i was shocked when i saw that recipe, even it's ingredients were also availiable at my home then i thought why don't make this recipe. so, i made this recipe and really enjoyed in making and eating as well.., let's go and check how it's made.

Ingredients :
4 motichoor laddoos
1litre/4 cups full fat milk
2 tbsps sugar(or as required)
a pinch of cardamom powder
almonds and pistachios for garnishing
few saffron strands to garnish
Method :
1. to make rabdi, take a thick bottom pan and pour the milk in it and bring it to a boil.
2. once boiled, on a low medium flame reduce the milk till it thickens up and remains 1/4 of the original quantity.
3. keep stirring at regular intervals, add the sugar and cardamom powder and mix well.
4. once it reaches the desired quantity, switch off the flame and let it cool completely.
5. now get ready with the parfait glass or your desired jar/glass to assemble.
6. crush one whole laddoo per glass/serving and push them gently.
7. now top the crushed laddoo with 2 spoonful of rabdi and tap it slightly so that rabdi spreads evenly.
8. you can put the glass in refridgerator, for 10-15 min to set the first 2 layers.
9. remove them and again repeat the process with the same you've done in the first layer.
10. when done, garnish with chopped/flaked almonds, pistachios.
11. lastly, to finish or to give them a final touch, throw few saffron strands, chill and serve.
