paneer ki kheer is delicious indian sweet dish prepared with crumbled paneer(cottage cheese) and milk. it is a 100% gluten-free indian pudding. it is easy to make tastes delicious. this recipe is one of my favourites desserts. it is made using milk, fresh paneer, or chenna, saffron, and rich dry fruits. this indian sweet takes few minutes to cook and tastes great. panner kheer fits perfectly on the menu of various festivites and occasions. be it holi, janmashtami, christmas or you name any other festival, paneer kheer  will enthral your taste buds whenever you make a bowlful of this dessert, on youtube i got many recommendations of this recipe so, i thought why not make this. let's get started.

Ingredients :

1 cup paneer/cottage cheese
1litre full cream milk
1/3 cup sugar or as needed
1 tsp cardamom powder
1/4 tsp saffron strands
1 and 1/2 tsp clarified butter/ghee
4-5 cashewnuts
1tbsp raisins
1 tbsp pistachios
 tbsp chironji

Method :

1. firstly, take a wok/pan heat it, when heated, add ghee and roast all the dry fruits untill they become golden brown and crunchy.

2. combine 1 tbsp of warm milk and saffron strands. set aside.

3. crumble paneer using your fingers. don't make a fine mash of it.

4. heat milk in a heavy bottom utensil (you can use a saucepan) over medium-high heat.

5. add cardamom powder and allow the milk to simmer until it reduces almost half the original amount.

6. keep stirring the simmering milk at regular intervals. collect the cream(malai) from the sides of the pan and add it back to the milk.

7. once the milk has thickened and reduces in quantity , add the saffron and sugar . stir to mix.

8. now add the grated paneer in the paneer and cook for 5-10 min. turn off the heat.

9. now, add roasted dry fruits and mix them nicely.

10. allow the paneer kheer to cool completely before keeping in the fridge. it is best served chilled. 

11. garnish it with chopped or sliced pistachios, almonds and saffron.

12. serve this tempting paneer kheer when chilled.
